Chetola Hearts of Palm Salad

Ingredients
- hearts of palm (sliced lengthwise)
- tomatoes (wedged)
- lettuce leaves
- olive oil
- white vinegar
- green olives (diced)
- black olives (diced)
- pimentos (diced)
- red onion (diced)
- capers
- parsley (finely chopped)
- lemon juice
- salt & pepper
Instructions
- Whisk together the oil, vinegar, and lemon juice. Mix in the olives, pimentos, onion, capers and parsley, then season to taste. Let stand several hours.
- Plate the lettuce, tomatoes, and hearts of palm, then garnish with the dressing and serve.
